Madre Mía was born in the historic heart of Salamanca with a clear idea: to bring back time honoured cooking without being afraid to reinvent it. Market produce, grandma's recipes and technique so that every bite makes sense.

And a name that is also what we want to hear at every table.

The chef

David Pereira García

With more than thirteen years in the trade, David has worked in kitchens where he learned that the hard part is keeping it simple: a stew cooked just right, a fry that stays light, fine produce that is never wasted.

His cooking looks to Salamanca and the Spanish larder, and lets itself play when the dish calls for it.

It should taste like home and still surprise you.

How we understand cooking

Produce first

Market, season and trusted suppliers. If the produce is good, the dish is already winning.

Salamancan roots

Tripe, pig's ear, pork crackling, rice dishes. Classic recipes treated with respect and cooked well.

A creative wink

Tempuras, glazes, thoughtful sauces. Just enough for tradition to look ahead.

A bright room, no rush

Cream walls, light wood and the geometric mural that gives the house its name. A place to sit and share, raise a glass with a good Castilla y León cellar and stay a while longer.
